Hi Ian,
I see two possible causes of the problem you encounter.
1. Power.
Although the Shuttle SX58J3 has a 500 Watt power supply, a power hungry processor and an idem graphics card may result in a dip in de power supply, possibly causing the graphic processor to card to crash.
2. The graphics card itself.
From your description, I assume that only the HD-image disappears, not the image on the monitor. And it happens only when HD-graphics from Wings Platinum are being shown.
I would try to test this graphics card in another computer (and another card in this Shuttle).
Picture crashes but not Platinum

Couple more things -
1. What is the exact error message when it bluescreens? Any error code given?
2. Try uninstalling anything ATI, i.e. clean your pc of ATI stuff. Reboot. Reinstall card's driver only, no Catalyst.
3. Not sure if you need an EDID Manager like the DVI Parrot - http://www.dviparrot.com/ - but it is best to narrow the cause before resorting to more devices.
From research, the 500w power supply of your Shuttle is sufficent for the HD6870 which seems to run reasonably cool as well. However, as Cuno pointed out, a stress test with HD resolution may affect the power being supplied. Have you tried running the signal to the projector at lower resolutions? Try from a low of 800x600, then progressively increase res to see at which res, the bluescreen is triggered.

Patrick Zorn had already alluded to this as a possibility but I couldn`t find it so I forgot the lead. The solution to my problem was in Systemsteuerung-Hardware-Energiesparoptionen. I merely ticked the box to maximize performance and - no blue-screen since! Thanks to Thomas et all for all attempts to help but I am mighty glad the solution was a simple one in the end.
